With the recent holiday... Thanksgiving... and all the eating...It reminds me of the most important things! Home, Family and FOOD. And, with that, what came to mind was that go-to meal that I am known for and asked about over and over again. Creamy chicken enchiladas is a favorite recipe that my family just loves!! The recipe is one that is requested by friends and family alike. Most of my five children request it for their birthday dinner or special occasions. I recently, had a friend that had a death in the family and this is the recipe I pulled to take over for the family. I take it when there is someone sick or someone has a baby or there is a potluck. It is just that good!! It is also easy. I kinda hate to give away my secret. But, caring means sharing.... so here it goes! It only requires five ingredients and I have been making it for about 20 years. The recipe is Creamy Chicken Enchiladas. The ingredients are:
4 chicken breasts or a whole chicken Flour tortillas Canned diced green chiles Monterey Jack cheese Heavy Whipping Cream
Boil the whole chicken and/or chicken breasts. (or if in a hurry, buy a roasted chicken at grocery store). Shred the chicken with a fork. Grate Monterey Jack cheese. Mix shredded chicken, cheese and green chiles. Take flour tortillas and put chicken/cheese/chiles mixture in center and roll (about 2 Tablespoons). Line a 9 x 12 casserole dish with the rolled/filled tortillas. Now, the best part! Take the heavy whipping cream and pour over enchiladas and sprinkle with the remaining grated Monterey Jack cheese. Put in a 350 degree oven for about 15 or 20 minutes until golden brown. The heavy whipping cream makes a delicious sauce....And, that is about it! It is delicious! Everybody loves it!
